Looking for a healthier alternative to those highly processed pre-fab potato nuggets? Make your own version with super delicious and nutritious sweet potatoes.

Sweet potatoes are more than just a delicious side dish for your holiday meal; they're a nutrition powerhouse for your everyday meals. As part of the "red/orange" subgroup of vegetables, they're packed with beta carotene - the plant form of vitamin A and a powerful antioxidant. They're also high in fiber and potassium, which are two nutrients that promote heart health and blood pressure regulation.

Try this deliciously simple recipe for Sweet Potato Patties with just three ingredients. Sweet potatoes are in season from late August to early November, so if you make this recipe during that time, they'll pack extra flavor.

Sweet potato patties

Ingredients:

  • 3 sweet potatoes
  • 1 cup bread crumbs (crushed)
  • 1 tablespoon vegetable oil

Instructions:

  • Wash hands with soap and water and wash the sweet potatoes.
  • Bake the sweet potatoes in a microwave until they are soft, then remove their peels.
  • Put the sweet potatoes in a medium bowl and mash them with a fork.
  • Crush the bread crumbs on a cutting board with a rolling pin or jar, then put the crushed bread crumbs in a small bowl.
  • Shape the mashed sweet potatoes into 6 small patties and roll each patty in the crushed crumbs.
  • Heat the oil in a frying pan on medium heat, then brown each patty on both sides in the oil.
  • Makes 6 servings.
