Summer is the perfect time to fire up the grill and enjoy delicious meals in the sunshine. These healthy BBQ and picnic recipes will help you savor all the flavors of the season while staying mindful of your health. From vibrant salads to lean protein options, there's something for everyone. So, enjoy your burger but consider elevating your grilling-game by including seafood, plant-based protein options and creative ways to add fruit and vegetables to your barbeques.

Grilled fish tacos with peach salsa

Ingredients:

For the salsa:

  • 1 can 15.25 ounces peach halves (drained, rinsed and chopped, about 1 cup)
  • 1/2 red bell pepper (finely chopped, about 1/2 cup)
  • 1/4 red onion (finely chopped, about 1/4 cup)
  • 1 whole jalapeno pepper (rinsed, seeded and finely chopped)
  • 1 tbs fresh cilantro (finely chopped)
  • 2 tsp lemon juice

For the fish:

  • 4 tilapia fillets (about 1 lb)
  • 1 tbs chili powder
  • 1/4 tsp low-sodium adobo seasoning
  • 1 package low-sodium sazon seasoning
  • 8 6" flour tortillas (warmed)

Instructions:

For the salsa:

  • In a medium bowl, stir together chopped peaches, bell pepper, onions, jalapenos, cilantro and lemon juice.
  • Cover and refrigerate until ready to use.

For the fish:

  • Heat grill or grill pan over medium-high heat. Using paper towels, pat fish dry, transfer to plate.
  • In a small bowl, stir together chili powder, low-sodium adobo and Sazon packet. Rub fish with spice mixture to coat completely.
  • Place fish on hot greased grill grates. Cook, flipping once until fish is opaque and flakes easily with a fork (145 °F), about 8 minutes. Thinly slice fish.
  • To serve, fill each tortilla with 1/2 fish fillet and about 1/3 cup of salsa. Makes 4 servings.

Grilled fruit kebabs

Ingredients:

  • 12 skewers
  • 4 cups assorted cubed fruit
  • 1 tbs canola oil
  • 2 tbs honey
  • 1 tsp vanilla extract
  • ¼ tsp ground cinnamon

Instructions:

  • Preheat a grill or grill pan to medium-hot.
  • Thread fruit cubes evenly onto the skewers, alternating the fruit varieties.
  • In a small bowl, mix together honey, vanilla extract and ground cinnamon.
  • Lightly brush the kebobs with oil and place on the grill. Cook for 3 to 5 minutes per side, basting with the honey mixture until you see grill marks. Remove from grill and brush with any remaining honey. Serve warm. Makes 6 serving.
